What you need
- Sugar – 4 table spoon
- Eggs – 3 medium size
- Milk – 1 and half cups
- Vanilla Essence – 1 table spoon
Time to prepare – 30 mins
Step 1 – Add 3 tablespoon of Sugar in a pan. Add some water and heat till the sugar cubes caramelise

Make sure you do not burn the sugar as it can taste bitter. A nice golden-brown colour would be appropriate.

Step 2 – Pour the hot caramel into a nice bowl while still hot.

Tip : Make sure you coat the sides of the bowl properly with this caramel. By coating all sides of the bowl you pudding will come out of the bowl more easily
Step 3 – Take another bowl and add 3 eggs

Mix the eggs gently using a whisk or a fork. Then add 1 and half tablespoon of sugar

Then add 1 and half cup of milk and 1 tablespoon of vanilla essence and mix slowly

Step 4 – Now strain this mix onto the caramel bowl as shown below

Cover the bowl with a lid or use aluminium foil to cover it.
Step 5 – take another larger bowl and pour 2 cups of water in it and place a cooling tray on top, You can also use a steaming pot used to make idly or the one used to make pittu as well. Turn on the cooker at high heat until the water starts to boil.

Step 6 – Lower the heat to medium and then place the caramel bowl in the cooling tray and close the large pot. Allow the pudding to steam for about 10 – 15min on medium heat.

After 10 – 15 mins use a fork or a toothpick to see if the pudding has cooked all the way.

Step 7 – Once it is cooked take it out of the steaming pan and allow it to rest in room temperature until its cool to touch. Then place in a fridge for 1 hour. After 1 hour in the fridge your caramel pudding would be ready to serve.
