Chilli Egg Curry is a very simple dish which kids love to eat. Its simple to make and very tasty.
What you need
- Eggs – 2 medium sized
- Garlic – 2 tablespoon – finely chopped
- Ginger – 1 tablespoon finely chopped
- Spring onion – 1 sprout
- Corn flour – 3 tablespoons
- Curry powder – 2 tablespoons
- Tomato sauce – 2 tablespoons
- Chilli sauce – 1 tablespoon
- Soy sauce – ½ tablespoon
- Vinegar – 1 tablespoon
Time to prepare – 20 mins
Step 1 – Boil 2 eggs completely and allow it to cool. Once cooled cut the egg into smaller pieces
Step 2 – Add 1 tablespoon of finely chopped ginger and 1 tablespoon of finely chopped garlic and red chilli powder to the egg pieces. Then add another uncooked egg to the mixture and mix nicely.
Add come corn flour to the mix. If you do not have corn flour you can use rice flour.
Step 3 – Fry the coated egg in medium heat. You can use coconut oil or vegetable oil.
Fry the eggs till it is golden brown in colour
Step 4 – Take another pan and put 2 tablespoons of oil. Add 2 tablespoon of chopped onions and half tablespoon of finely chopped garlic. Fry for 20 seconds and then add chillies
Step 5 – Once the onions are fried add a little bit of water, 2 tablespoon of tomato sauce and 2 tablespoon of Chilli sauce. Then add 1 tablespoon of white vinegar and half tablespoon of soy sauce.
Step 6 – Add the fried eggs to the sauce and toss it together until all the pieces are coated in the sauce
Step 7 – Add some Spring onions to give texture
